Japchae; Korean Glass Noodles, 잡채

Japchae, meaning "mixed vegetables," is a popular Korean dish made with sweet potato starch noodles (dangmyeon) stir-fried with vegetables, beef (optional), and a savory-sweet soy-based sauce. Originally, Japchae was a royal dish during the Joseon Dynasty (1392–1897) and did not include noodles at first—only seasoned vegetables. However, over time, glass noodles were introduced, transforming Japchae into the beloved dish we know today.

Japchae is often served on special occasions, celebrations, and holidays, such as Korean New Year (Seollal) and Thanksgiving (Chuseok). The dish is known for its chewy noodles, colorful vegetables, and well-balanced flavors, making it a favorite side dish (banchan) or main meal.

Japchae (Korean Glass Noodles) - Recipe

Ingredients (Serves 2):

  • Main Ingredients:

    • 150g sweet potato noodles (dangmyeon)
    • 100g beef (ribeye or sirloin, thinly sliced) – optional
    • 1/2 carrot, julienned
    • 1/2 onion, thinly sliced
    • 1/2 red bell pepper, thinly sliced
    • 1/2 cup mushrooms (shiitake or oyster), sliced
    • 1 handful of spinach
  • Sauce:

    • 2 tablespoons soy sauce
    • 1 tablespoon sesame oil
    • 1 teaspoon sugar
    • 1 teaspoon sesame seeds
    • 1 teaspoon garlic, minced
    • 1/2 teaspoon black pepper

Instructions:

  1. Prepare the Noodles:

    • Boil the sweet potato noodles according to package instructions (usually about 5-7 minutes).
    • Drain, rinse under cold water, and set aside. Toss with 1 teaspoon sesame oil to prevent sticking.
  2. Cook the Vegetables:

    • Heat a pan with 1 teaspoon of sesame oil over medium heat. Stir-fry the onions, carrots, bell pepper, and mushrooms for 3-4 minutes until slightly softened. Remove from the pan.
  3. Cook the Beef (Optional):

    • In the same pan, stir-fry the beef with a dash of soy sauce until cooked through (about 2-3 minutes).
  4. Blanch the Spinach:

    • Briefly blanch the spinach in boiling water for 30 seconds, then drain and squeeze out excess water.
  5. Mix Everything Together:

    • In a large bowl, combine the cooked noodles, vegetables, beef, and spinach. Add the soy sauce, sesame oil, sugar, garlic, and black pepper. Toss well to coat everything evenly.
  6. Final Touch:

    • Garnish with sesame seeds before serving.
